The history of gastronomy is enormous and is not readily perceived without the involvement of all our senses.
But what we hold is the experience as it is transmitted through the books or reaches our kitchens after some "hidden heroes" adapt it to our own data so that we can accept it without hesitation and love it.
The new kitchen respects tradition in terms of technique. After conquering all "ways" she selects those who fit her. Selects the light but delicious. It avoids prepared meals, but it introduces ways of shorter packing. The new kitchen is not national but has an identity.
